Snack on Jen's Almond Butter & Jam Bites

No-Bake Almond Butter & Jam Bites 


Recipe created by celebrity trainer Jen Widerstrom and featured in her book “Diet Right for Your Personality Type” 

We all need an energy boost at some point during the day, particularly when the afternoon rolls around. These No-Bake Bites made with almond butter, chia seeds and jam make for an easy snack to consume at your desk as a quick pick-me-up. 

Yields 12 servings


1/2 cup almond butter

2 tablespoons unsweetened coconut flakes

1 cup old-fashioned oats

1 tablespoon jam (any flavor)

1 tablespoon chia seeds

1 tablespoon hemp seeds

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)


In a large bowl, mix together the almond butter, coconut flakes, oats, and jam until well combined (use a fork, or even your hands if necessary). 

Add the chia seeds, hemp seeds, vanilla extract, and chocolate chips (if using) and combine. If the mixture is too dry, add a little more almond butter to help it stick together. If it’s too wet, add more oats. 

Form the mixture into 12, 1 ½” balls and serve. You can store these in an airtight container in the fridge for up to 1 week, or in the freezer for 1 month.
