Prevent the inevitable afternoon crash with this fresh Kale Quinoa Chop topped with chicken, raisins and almonds. Full of protein and fiber, this salad is a smart lunch option to remain satiated until dinner time. 

Yields 1 serving


1 (6- to 8-ounce) chicken breast, cooked and cubed

2 cups chopped fresh kale

2 cups chopped romaine lettuce

1/2 cup cooked quinoa

1/4 cup golden raisins

1/8 cup sliced or slivered almonds

3 tablespoons lemon juice

1 tablespoon extra-virgin olive oil


In a small bowl, toss the chicken, kale, romaine, quinoa, raisins, and almonds. In a separate bowl, whisk the lemon juice and oil to make the dressing. Toss the salad with the dressing and serve.
